I often omit the end of a sentence if it is obvious what it is going to be. For example, in the "If I counted the bodies too..." above the ellipsis is indicating that I've missed out "there'd be even more". I think most of my other uses are at the end of paragraphs, where a full-stop is the right thing to use but for some reason I want to leave it hanging. As if there might be something more coming, but actually there isn't... At least, that is how it seems to me now that you've made me think about it. Almost like the way we would say 'erm' to fill a gap whilst speaking although of course with typing you have the luxury of pausing to think about what you type before you say it but maybe it's nice to show your train of thought...
